17 羊眼儿包子 Yangyanr Steamed Stuffed Buns
Yangyanr Steamed Stuffed Bun is a famous Hui cuisine dish(回民饮食).“Yangyanr”means“sheep eyes(羊眼儿).”According to legend，one day Emperor Kangxi of the Qing Dynasty(康熙皇帝)put on common clothes and went out of his residential palace to taste Yangyanr Steamed Stuffed Buns.The emperor entered a food shop that sold Hui-styled steamed mutton buns.The shopkeeper served tea to the emperor，and said with a smile，“Your majesty，I'm afraid that you will be unhappy with the food I have to offer.In your residential palace you may eat many delicacies，so how could you descend from your superior dignity into my humble shop just for Yangyanr Steamed Stuffed Buns? Honestly，I don't dare to present the buns to you.”
The emperor was aware that the shopkeeper already knew his identity，but he behaved at ease，insisting that he would prefer eating Yangyanr Steamed Stuffed Buns.
“Your majesty，”said the shopkeeper，“your presence in my humble shop is a great honor for me.Please wait a moment，and the buns will be ready soon.”
A few minutes later，the shopkeeper returned with a plate of steaming hot buns whose smell greatly pleased the emperor.He grasped a bun with his chopsticks and put it into his mouth.To his surprise，the bun was delicious and had tasty ingredients.
“Where are the sheep eyes on the bun?”the emperor asked.
The shopkeeper replied，“Your majesty.The meat stuffing for the buns has no sheep's eyes at all.The buns each are small in size，and I do shape them like sheep's eyes，so people called them Yangyanr Steamed Stuffed Buns.”
“Your buns really taste good.Please have them delivered regularly to my palace，”said the emperor.
From then on，Yangyanr Steamed Stuffed Buns gained considerable fame across the city.As a result，other Hui people followed suit and made the same shaped buns.Gradually Yangyanr Steamed Stuffed Buns became one of the Hui people's favourite snacks.
